In this way, Quesos Bolaños achieves in an original way, with its 9 giant cheeses, to spread one of the most typical Canarian products, such as goat cheese, not only in the peninsula, but also outside our borders, being able to take advantage of the visibility globally provided by the XII edition of Cheese 2019, in the Italian town of Bra, which will be attended by customers from all over the world and where you can taste not only one of those giant cheeses, but also other typical Canarian products such as the almogrote.
In the production of the 9 Super cheeses, Quesos Bolaños has used a total of 9,000 liters of raw goat’s milk from the south of the island of Gran Canaria.
The total weight of the 9 cheeses reaches 1,300 kilos, having to use between 50 and 100 kilos of salt in the production of the crust and another 200 kilos at the time of pressing, for which a total of 8 jugs of water were needed. 25 liters each to perfectly execute the press of each of the cheeses.
It all started with the challenge launched by the master cheesemaker from the Valencian cheese flock, Andrés Gracia, who commissioned the company Quesos Bolaños to make a giant Canarian cheese, which not only accepted the challenge, but also managed to make the cured cheese largest in the country.
Quesos Bolaños has managed to beat all national records, with the production of a goat’s milk cheese from the south of Gran Canaria, matured and cured, weighing no more and no less than 174 kilos, the largest in the history of our country in that category.
The gigantic cheese will travel to Valencia next November, where it will be cut into tacos, thanks to a stainless steel wire, in what is considered the Temple of the Valencian Community cheeses, the Majada de los Quesos.
Later it will be distributed by portions in the main specialized cheese shops throughout the country, where you can taste the excellence of the artisan product of Quesos Bolaños.
Not happy enough to beat the record for the largest cured cheese in Spain, the artisans of Quesos Bolaños got down to work to make another 8 large cheeses, weighing about 135 kilos each, and which will be distributed this Christmas in:

With its 135 kilos, it will be the largest raw milk artisan cheese of the event, with Quesos Bolaños being the first company in the Canarian archipelago invited to participate in it, where they will also present other typical products such as almogrote.
