The Bolaños’ Cheese, with its 135 kg of weight, has been the largest of the artisan cheeses that has been cut in the XII Edition of the Cheese Naturale è Possibile in the Italian town of Bra, considered as the mecca of artisan fairs of cheeses around the world, as well as being probably the most photographed cheese at the fair.
A steel cable was in charge of being able to cut the mammoth cheese, made under the guidelines and experience of the master cheesemaker, Isidoro Jiménez and the expertise in making the master cheesemaker, Lionel Hernández, amidst great expectation and before the world’s leading experts in artisan cheeses, who were surprised by the intense flavor of Canarian goat cheeses.
The great reception that this “super cheese” has had in Bra, allows not only the Quesos Bolaños brand, but also Canarian cheeses in general to be known at a fair attended by people from all over the world, being an honor for the Gran Canaria company to have the possibility of publicizing a product of the highest quality, beyond our borders.
The different people who had the opportunity to taste the cheese once it was cut were surprised by its intense flavor, despite only being aged for 3 and a half months, as well as its low level of acidity despite being a cheese. of such a large size, the quality of the milk used in its production being fundamental in this sense, 100% goat from the south of Gran Canaria.
